Baked Flounder on a Bed of Veggies

INGREDIENTS
1 cup shredded carrots
2 stalks of celery
1/2 cup of shredded cabbage
1 medium potato
2 TBSP parsley
2 TBSP water
1/4 cup of lemon juice
2 tsp dill weed
2 TBSP butter
2 cups shredded cheddar cheese
1 1/2 lbs. flounder fillets

DIRECTIONS
Preheat oven to 400 degrees
Sauté veggies for 5 minutes and remove from heat.
Add 1 1/2 cups of cheddar cheese.
Coat baking dish with butter and place 2/3 of vegetables and cheese mixture into dish.
Arrange fish on top of the veggie mixture.
Spoon rest of veggies on top of fish and sprinkle with remaining cheese.
Bake uncovered for 20 minutes.
Serves 4.
