Tropical Flounder Delight

INGREDIENTS
1 1/2 lbs. flounder fillets
4 tsp fresh ginger, grated
1 tsp lime peel, grated
1/4 tsp salt
1/4 tsp ground pepper
1/4 cup all-purpose flour
1 TBSP vegetable oil

Vinaigrette:
6 TBSP olive oil
2 TBSP lemon juice
2 TBSP orange juice
2?TBSP lime juice
2 TBSP Dijon mustard
1/2 tsp salt
1/4 tsp ground pepper

DIRECTIONS
Preheat oven to 350 degrees
Rub one side of each flounder fillet with ginger and lime peel.
Sprinkle with 1/4 teaspoon of salt and a 1/4 teaspoon of pepper.
Place flour in a shallow bowl.
Dip fillets in the flour and lightly shake off excess.
Heat a large, ovenproof skillet over high heat until hot.
Add oil and heat until hot.
Add fillets, seasoned side down and cook for 3-4 minutes or until golden brown, turning once.
Place in oven and bake for 6-8 minutes or until fish begins to flake.
Meanwhile, in a blender, combine all vinaigrette ingredients and blend until combined.
Drizzle over each serving plate and top with flounder fillets.
Serves 4.
