INGREDIENTS
4 shark steaks, ½ inch thick
¾ cup olive oil
¾ cup lime juice
1 TBSP. garlic, minced
1 sprig fresh basil
½ tsp. cracked peppercorns
1 tsp. salt
Marinate steaks in the above ingredients for 4 hours.
Lime Basil Sauce:
½ cup lime juice
½ cup white wine
3 TBSP. minced garlic
3 TBSP. minced shallots
1 TBSP. heavy cream or half and half
6 oz. unsalted butter
4 TBSP. fresh basil, julienned
DIRECTIONS
Combine first 4 ingredients in a deep saucepan and reduce to ¼ the volume.
Pour into a bowl and stir in the cream.
Whisk in the butter, 1 TBSP. at a time, until thoroughly combined.
Keep the sauce warm while adding the butter.
Stir in the fresh basil.
Serve sauce warm until ready to serve.
