INGREDIENTS
2 TBSP butter
1 onion, finely chopped
2 TBSP flour
3 1/2 cup chicken broth
1/2 cup tomato puree
1/4 cup sherry
1/4 tsp. salt
1 lb. lobster meat, cut into 1-inch pieces
1 1/4 cup milk
1/4 tsp. tabasco sauce
1 tsp. paprika
2 plum tomatoes, chopped
1 TBSP fresh parsley, finely chopped
DIRECTIONS
Saute onion in butter over medium-high heat for 5 minutes.
Stir in flour and cook for 3 minutes.
Stir in next 4 ingredients and bring to a boil.
Simmer on low, covered, for 10 minutes.
Add lobster and simmer for 6 minutes or until meat is opaque.
Stir in next 3 ingredients and cook over medium heat for 3 minutes.
Stir in tomatoes and parsley.
Serve.
