Clam Fritters

1 1/2 cups flour
2 tsp. salt
1 tsp. sugar
1/2 tsp. black pepper
1/2 tsp. ground ginger
1/8 tsp. cayenne pepper
12 oz. beer
Juice of 1 lemon
1 cup minced hard-shell clams
Vegetable oil for deep frying
Lemon wedges

Mix together the flour, salt, sugar, pepper, ginger and cayenne in a large bowl.
Add the beer and lemon juice and stir to blend.
Mix in the clams.
Heat at least 2 inches of oil in a deep-fryer or large saucepan.
When the oil is about 375 degrees, drop the batter, 1 TBSP. at a time, into the oil.
Cook 6 or 8 fritters at a time, without crowding.
Drain on paper towels and serve immediately with the lemon wedges.
