Flounder Florentine

INGREDIENTS
12 oz. package of chopped spinach
1/4 stick of butter
1/2 lb. sharp cheese
1/4 lb. cooked shrimp, peeled and chopped
Garlic powder
Salt & pepper
4-6 flounder filets

DIRECTIONS
Preheat oven to 350 degrees.
Cook spinach and drain well.
Melt butter in a sauté pan and add spinach, cheese and shrimp. Cook on low temperature until cheese is totally melted, stirring continuously.
Add garlic powder, salt and pepper.
Remove from heat.
Lay flounder filets flat and place 1/4 lb. of mixture on each filet.
Roll flounder filets around filling.
Place in baking pan and bake for 20 to 25 minutes.
Serves 4-6.
